Food studios have emerged that act as culinary incubators helping new chefs and chefs-for-hire launch and scale their virtual cuisine concepts through cloud kitchen facilities. This allows testing multiple cuisines and menus on delivery platforms to gauge customer response before making investments into brick-and-mortar spaces.

    Some key advantages that have propelled the growth of delivery-focused kitchen formats in the UAE include:

This expansion can be accomplished faster and at much lower costs than building multiple branch stores. It provides the nimbleness to adapt rapidly to changing market trends and consumer preferences.

    With their growing popularity and economic impact, delivery kitchen models have received formal regulatory recognition from the Dubai Municipality. In 2021, the regulatory body issued new guidelines classifying ‘cloud kitchens’ as a separate business activity with specific licensure, compliance and operational requirements. This provided the necessary framework for the legal functioning and standardization of commissary-style production facilities catering solely to online food delivery.

    However, constraints remain around the usage of residential properties or non-approved commercial spaces for commercial food production. Countries in the Gulf Cooperation Council spearhead regional industry growth and the UAE currently dominates as the largest market. With its dynamic business environment, large expat workforce and widespread smartphone penetration, the nation provides an ideal testing ground for new virtual brands and delivery innovations.
